Blender Cottage Cheese Oat Pancakes with Warm Blueberry Compote
Fluffy protein pancakes blitzed from oats and cottage cheese, no refined flour, topped with quick blueberry compote.

These are the pancakes I make when I want the comfort of a stack without the mid-morning crash. Everything goes in the blender, so the oats grind into a soft batter and the cottage cheese practically disappears, leaving tender, custardy pancakes with real staying power. A five-minute blueberry compote does the sweetening, so you skip the syrup and still get plenty of jammy fruit in every bite.
Ingredients
- 90 g rolled oats , old-fashioned, not instant
- 200 g Cottage cheese , full-fat or 2%
- 2 large eggs
- 60 ml Milk , any, to loosen the batter
- 6 g Baking powder
- 5 ml Vanilla extract
- 1 g fine sea salt
- 1 g ground cinnamon (optional – can be omitted)
- 10 g neutral oil or butter , for the pan
- 200 g blueberries , fresh or frozen
- 15 ml maple syrup , for the compote
- 5 ml lemon juice , freshly squeezed

Make the compote first so it can thicken while you cook. Combine the blueberries, maple syrup and lemon juice in a small saucepan over medium heat. Simmer, stirring now and then and lightly crushing about half the berries against the pan, until glossy and syrupy, 6 to 8 minutes. Slide off the heat; it will keep thickening as it sits.

Add the oats, cottage cheese, eggs, milk, baking powder, vanilla, salt and cinnamon to a blender. Blend on high until the batter is smooth and the oats are fully ground, about 45 seconds, scraping down once. Let the batter rest for 5 minutes so the oats hydrate and it thickens to a pourable, spoonable consistency.

Heat a nonstick or well-seasoned skillet over medium-low and film it lightly with oil or butter. Pour in rounds of about 60 ml each. Cook until bubbles break the surface and the edges look set, 2 to 3 minutes, then flip and cook until golden and springy, another 1 to 2 minutes. Keep the heat gentle so the insides set before the outsides scorch; wipe and re-grease the pan between batches.

Stack the pancakes and spoon the warm blueberry compote over the top. Serve right away, with extra cottage cheese or a dollop of yogurt alongside if you want to push the protein higher.
