Nordic Omega Plate — Smoked Mackerel on Rye with Dill Cream & Quick Pickled Cucumber
A no-cook Nordic breakfast plate: smoked mackerel, dark rye, dill-yogurt cream and quick cucumber pickle.

This is the Nordic breakfast I reach for when I want protein and omega-3 without turning on the stove. Flaky smoked mackerel sits on dense wholegrain rye, cooled by a sharp dill-yogurt cream and brightened with a two-minute cucumber pickle that cuts the richness of the oily fish. It comes together faster than scrambling eggs, yet it eats like a proper open-faced smørrebrød.
Ingredients
- 200 g smoked mackerel fillets , skin removed, flaked into large pieces
- 4 Dark wholegrain rye bread , slices, dense Nordic-style
- 120 g Plain Greek yogurt , full-fat or 2%
- 8 g Fresh dill , finely chopped, plus fronds to garnish
- 150 g cucumber , about half a cucumber, thinly sliced
- 30 ml White wine vinegar
- 1 lemon , half zested, cut into wedges
- 5 g Dijon mustard , about 1 teaspoon
- 40 g radishes , thinly sliced (optional – can be omitted)
- 1 fine sea salt , to taste

Make the quick pickle: toss the thinly sliced cucumber with the white wine vinegar and a pinch of flaky salt in a small bowl. Set aside to macerate while you build the rest of the plate, tossing once or twice so the slices soften and turn glossy.

Stir together the dill cream: mix the Greek yogurt, chopped dill, Dijon mustard, lemon zest and a squeeze of lemon juice. Season with salt and pepper. It should taste sharp and herby enough to stand up to the oily fish; add a little more lemon if it feels flat.

Flake the smoked mackerel into large pieces, checking for any stray pin bones as you go. Keep the flakes generous so they read as substantial protein rather than a spread.

Build each plate: spread a spoonful of dill cream over each rye slice, pile on the mackerel, then drape over drained pickled cucumber and radish if using. Finish with dill fronds, cracked pepper, a pinch of flaky salt and a lemon wedge on the side to squeeze at the table.
