This is dessert built the way a Swedish kitchen treats a glut of high-summer berries: no oven, no fuss, just oats and jumbo rolled grains left to swell overnight in milk until they turn spoonably soft. In the morning you fold through a quick crushed-berry compote sharpened with lemon and a whisper of maple, then swirl in thick skyr for a tangy, protein-cool contrast. It's fibre-dense and genuinely satisfying, sweet enough to feel like a treat but leaning almost entirely on ripe fruit for its sugar.

  • 160 g rolled oats , not instant
  • 400 ml Unsweetened milk
  • 20 g chia seeds
  • 30 ml maple syrup , divided
  • 1 g fine sea salt , a pinch
  • 300 g mixed berries , strawberries hulled and quartered
  • 1 lemon , zest and juice
  • 300 g thick skyr or Greek yogurt
  • 5 ml Vanilla extract (optional – can be omitted)
  • 20 g toasted flaked almonds , for topping (optional – can be omitted)

    In a bowl, stir together the oats, chia seeds, milk, half the maple syrup, the vanilla if using, and the pinch of salt until evenly combined and no dry oats remain. Cover and refrigerate overnight, or at least 6 hours, so the oats and chia swell to a soft, spoonable pudding.

    The next day, set aside a handful of the prettiest berries for topping. Put the rest in a bowl with the lemon juice, half the lemon zest and the remaining maple syrup, then crush lightly with a fork — leave plenty of texture rather than reducing to a smooth purée. Let it sit 5 minutes to draw out the juices into a loose fresh compote.

    Loosen the set oats with a splash more milk if needed, then layer into 4 glasses or bowls: oats, a spoon of crushed berries, a dollop of skyr, repeat. Swirl the top skyr with a knife tip so it marbles into the berries. Finish with the reserved whole berries, the toasted almonds, and the remaining lemon zest. Serve cold.
