This is the German Abendbrot idea turned into a bright summer brunch: proper dense rye bread, a thick layer of whipped quark loosened just enough to spread, and berries barely crushed so they bleed into the cream. Quark does the heavy lifting on protein while the rye brings real fiber, so a couple of these actually hold you until dinner. I keep the sugar to a whisper of honey on the berries and let ripe summer fruit do the sweetening.

  • 4 Dense wholegrain rye bread , thick slices, lightly toasted
  • 300 g quark
  • 60 g Plain Greek yogurt , to loosen the quark
  • 1 lemon , zest of the whole lemon plus 1 tsp juice
  • 3 ml Vanilla extract
  • 15 ml honey , divided
  • 250 g mixed berries , strawberries hulled and halved
  • 30 g Sunflower seeds
  • 6 fresh mint leaves , torn (optional – can be omitted)

Instructions

    Toast the sunflower seeds in a dry skillet over medium heat, shaking often, until golden and fragrant. Tip them onto a plate so they stop cooking.

    Put roughly a third of the berries in a bowl with half the honey and the lemon juice. Crush lightly with a fork so they release juice, then fold in the remaining whole and halved berries and let them macerate while you make the quark.

    Whisk the quark with the Greek yogurt, lemon zest, vanilla and remaining honey until smooth and thick but spreadable. Taste and adjust with a little more zest if you want it brighter.

    Lightly toast the rye slices so the edges crisp but the center stays chewy. Let them cool for a minute so the quark doesn't slide.

    Spread a generous layer of the whipped quark over each rye slice, spoon the macerated berries and their juices on top, and finish with toasted sunflower seeds and torn mint. Serve right away while the toast is still crisp.
