Köttbullar are non-negotiable comfort food, so this keeps everything that matters — the nutmeg-and-allspice warmth, the silky gravy, the tart lingonberry — and quietly makes it kinder. Turkey stands in for the usual pork-and-beef, the gravy is built on stock with just a little cream, and the mash is half root vegetables so it lands lighter but still buttery-tasting. Lingonberry jam is the sharp, essential counterpoint; cranberry works if that's what you can find.

Mash

  • 400 g floury potatoes , peeled, chunked
  • 200 g carrots , peeled, chunked
  • 200 g swede or celeriac , peeled, chunked
  • 80 ml warm milk
  • 15 g butter

Meatballs

  • 500 g lean ground turkey
  • 35 g wholemeal breadcrumbs
  • 60 ml Milk
  • 1 piece large eggs , beaten
  • 1 piece small onion , grated
  • 1 g Ground allspice
  • 0.5 g Ground nutmeg
  • 15 ml olive oil
  • 80 g lingonberry jam , to serve
  • 5 g fine sea salt
  • 1 g black pepper

Gravy

  • 20 g plain flour
  • 350 ml low-sodium beef or chicken stock
  • 60 ml single cream
  • 5 ml soy sauce

    Put the potatoes, carrots and swede in a pot of cold salted water, bring to the boil and simmer until very tender, 18–20 minutes. Drain well and let the steam die off for a minute.

    While they cook, soak the breadcrumbs in the milk for 5 minutes. Add the turkey, egg, grated onion, allspice, nutmeg, salt and a grind of pepper, and mix gently just to combine. Roll into small meatballs (about 5 per serving), wetting your hands to stop sticking.

    Heat the olive oil in a large skillet over medium-high and brown the meatballs all over, turning, about 6 minutes; they needn't be cooked through yet. Transfer to a plate.

    Lower the heat to medium. Sprinkle the flour into the pan drippings and stir 1 minute, then whisk in the stock a little at a time until smooth. Add the cream and soy sauce, return the meatballs, and simmer gently until the gravy coats a spoon and the meatballs are cooked through (74°C), 8–10 minutes.

    Mash the drained roots with the warm milk and butter until smooth; season to taste. It should taste rich but stay a touch rustic.

    Serve the meatballs and gravy over the mash with a bright spoonful of lingonberry jam on the side and a little parsley.
