Wholemeal Oat Bran Scones with Crushed Berries
Fibre-packed remake of the classic scone — wholemeal, oat bran and flax, barely sweetened, with unsweetened berries.

The classic scone is soft white flour, sugar and a slick of jam — pleasant, but it spikes and fades. This remake keeps the same fast rub-in-and-bake ritual and the same tender crumb, but builds the flour up with wholemeal, oat bran and ground flax so every scone carries real fibre. Sugar drops to a whisper (the berries do the sweetening), and instead of jam you crush fresh berries with a fork — no added sugar, all fruit. They still rise proud and split clean; they just leave you fuller for longer.
Ingredients
- 200 g Wholemeal flour , plus extra for dusting
- 60 g Oat bran
- 20 g Ground flaxseed
- 12 g Baking powder
- 3 g fine sea salt
- 15 g honey , warmed slightly so it stirs in
- 60 g Cold unsalted butter , diced
- 150 ml whole milk , cold, plus a little to glaze
- 1 large eggs , beaten
- 200 g mixed berries , raspberries and blueberries, for crushing

Heat the oven to 220°C (200°C fan) and line a baking tray with paper. Whisk the wholemeal flour, oat bran, ground flax, baking powder and salt in a large bowl so the raising agent is evenly distributed — wholemeal and bran are heavy, so they need a confident lift.

Rub the cold diced butter into the dry mix with your fingertips until it looks like coarse, damp crumbs. Stir the honey into the cold milk, then pour in most of it along with the beaten egg (hold back a spoonful of egg for glazing). Bring together with a knife into a rough, slightly sticky dough — add the last of the milk only if it won't come together. Don't knead; a few turns is enough.

Pat the dough out on a floured surface to about 3 cm thick and cut 8 rounds with a 6 cm cutter, pressing straight down without twisting so they rise level. Brush the tops with the reserved egg, dust with a little oat bran, and bake until risen and deep golden and the bases sound hollow.

While they cool for a few minutes, crush the berries with a fork into a loose, unsweetened compote — no sugar, just the fruit's own juice. Split the warm scones and spoon the crushed berries over. Best the day they're baked.
