Saffron is the dried stigma of the Crocus sativus flower — hand-picked, which is why it costs more by weight than almost anything in the kitchen. What it is
Saffron is the crimson stigma of the autumn crocus. Roughly 150 flowers give a single gram, which is why it’s the most expensive spice on earth — and why adulteration is common (dyed safflower, turmeric or marigold sold as ‘saffron’). Its bioactive pigments are the carotenoids crocin and crocetin, plus the aroma compound safranal; these are potent antioxidants thought to influence serotonin signalling and inflammation in the brain.
Mood & depression — the evidence
This is saffron’s standout claim, and it holds up better than most spice health stories. A series of randomised, placebo-controlled trials — pooled in several meta-analyses — found that 30 mg/day of saffron significantly reduced depression scores versus placebo in adults with mild-to-moderate major depression.1 Strikingly, head-to-head trials reported saffron performing comparably to fluoxetine (Prozac), imipramine and citalopram at usual antidepressant doses, with fewer sexual side effects in some studies.2 Some trials also used saffron as an add-on to an SSRI and saw additional improvement. The trials are mostly small and short (6–8 weeks) and many come from a single region, so it’s promising rather than settled — but the consistency across studies is unusual for a spice.
Anxiety, PMS & more
Beyond depression, controlled trials suggest saffron can ease anxiety symptoms and reduce premenstrual (PMS) mood and physical symptoms.3 Smaller studies have explored saffron for ADHD (comparable to methylphenidate in one small trial), age-related macular degeneration (crocin supports the retina), appetite/snacking and sexual function. These are early-stage but point the same direction: the crocin/safranal actives are biologically busy.
How to use & dose
For mood, the researched dose is 30 mg/day of a standardised extract (often split 15 mg twice daily; branded extracts such as affron® are standardised to safranal/crocin). That’s far more concentrated than cooking: a saffron-rich paella uses flavour-level pinches, not a mood dose. Because real saffron is costly and widely faked, buy whole threads or a reputable standardised extract and check for a certificate of analysis.
Safety
At culinary amounts and at 30 mg/day, saffron is well tolerated (occasional mild nausea, headache or appetite change). Doses climb into problem territory fast for a spice: around 1.5–5 g can be toxic and higher doses dangerous. Avoid saffron supplements in pregnancy — high doses can stimulate the uterus — and be cautious if you take antidepressants, blood thinners or blood-pressure medication, or have bipolar disorder. Depression is a medical condition: treat saffron as something to discuss with a clinician, not a reason to stop prescribed treatment.
