This is the porridge Nordic cooks turn to when the mornings go dark and the oat bowl starts to feel tired. Pearl barley cooks down slow and glossy, staying chewy at its center while it thickens the milk into something almost like a loose risotto — and that beta-glucan-rich grain keeps you full past mid-morning in a way instant oats never manage. Roasting the berries concentrates their color and their antioxidants into a tart, jammy pool you stir through at the end, no added sugar needed beyond a thread of honey. Make the barley the night before if weekday mornings are tight; it reheats beautifully with a splash more milk.

  • 200 g pearl barley , rinsed under cold water
  • 700 ml whole milk , plus extra for loosening
  • 300 ml water
  • 2 g fine sea salt
  • 1 g Ground cardamom , about 1/2 tsp
  • 300 g mixed berries , fresh or frozen, such as blueberries, raspberries and blackberries
  • 30 g honey , about 1 1/2 tbsp, divided
  • 1 lemon , zested, then juiced for 1 tbsp
  • 50 g hazelnuts , roughly chopped
  • 20 g Pumpkin seeds
  • 15 g Ground flaxseed , about 2 tbsp (optional – can be omitted)

    Rinse the pearl barley in a sieve under cold running water until it runs clear. Tip it into a heavy saucepan with the milk, water, salt and cardamom. Bring to a gentle boil, then drop to a low simmer.

    Simmer uncovered, stirring often and scraping the base so the milk doesn't catch, until the barley is tender and chewy and the liquid has thickened to a loose, creamy porridge. Add a splash more milk if it tightens before the grains are soft.

    Meanwhile, heat the oven to 200C. Toss the berries with half the honey, the lemon juice and half the lemon zest in a small baking dish. Roast until bursting, glossy and syrupy, stirring once halfway through.

    Toast the hazelnuts and pumpkin seeds in a dry skillet over medium heat, shaking the pan, until fragrant and lightly golden. Tip onto a plate so they stop cooking.

    Stir the ground flaxseed and remaining lemon zest into the finished porridge. Spoon into warm bowls, top with the roasted berries and their syrup, scatter over the toasted nuts and seeds, and finish with a thread of the remaining honey.
