Autumn Roasted Grapes with Honeyed Whipped Ricotta

This is the Italian way to end an autumn dinner: whole-milk ricotta whipped until it turns airy and mousse-like, spooned under a heap of grapes roasted until they blister, split and turn jammy in their own juice. Roasting concentrates the grapes' sugar so you need only a whisper of honey, while the ricotta brings real protein and a savory-sweet edge that keeps the whole thing from tipping into candy. It comes together in under half an hour and tastes like far more effort than it is.
Ingredients
- 500 g seedless red grapes , washed and patted dry; large clusters snipped into small bunches
- 400 g whole-milk ricotta , drained if very wet
- 30 ml honey , divided — 15 ml for the grapes, 15 ml for the ricotta
- 15 ml olive oil
- 15 ml balsamic vinegar
- 4 fresh thyme sprigs
- 1 g fine sea salt , a pinch
- 1 lemon , finely grated zest only
- 40 g shelled unsalted pistachios , roughly chopped
- 2 ml Vanilla extract (optional – can be omitted)

Heat the oven to 220°C. Tip the grapes onto a rimmed baking sheet, drizzle with the olive oil, balsamic vinegar and 15 ml of the honey, and toss to coat. Spread them in a single layer, tuck in the thyme sprigs and scatter over the flaky sea salt.

Roast until the grapes are blistered, some split and slumping, and the juices have reduced to a syrup at the edges of the pan. Give the sheet a shake halfway through. Discard the thyme sprigs and let the grapes cool for a few minutes so the syrup thickens.

Meanwhile, whip the ricotta: add the ricotta, the remaining 15 ml honey, the lemon zest and the vanilla (if using) to a bowl and beat with a whisk or electric beater for 2–3 minutes until visibly lighter, smooth and mousse-like, with no graininess.

Spread the whipped ricotta across four shallow bowls or a single platter. Spoon the warm roasted grapes and their syrup over the top, scatter with the chopped pistachios and serve while the grapes are still warm against the cool ricotta.
