Beeren-Quarkspeise: German Magerquark Bowl with Summer Berries & Toasted Flax

This is the German breakfast a lot of gyms wish they'd invented: a bowl of magerquark, the near-fat-free fresh cheese Germans eat by the tub, whipped until it's spoonable and mounded with whatever berries the market has that morning. I loosen the quark with a little milk so it goes from stiff and chalky to silky, brighten it with lemon and vanilla, and lean on toasted ground flax plus a whisper of honey instead of a sugar dump. It's roughly 35 grams of protein before the berries, genuinely low in fat, and it comes together faster than the coffee brews.
Ingredients
- 250 g low-fat quark , cold from the fridge
- 40 ml milk , plus a little more to loosen if needed
- 20 g Ground flaxseed , about 2 tablespoons
- 150 g mixed berries , rinsed and patted dry
- 8 g honey , about 1 teaspoon; or maple syrup
- 1 lemon , zest of half, plus a small squeeze of juice
- 2 ml Vanilla extract , about half a teaspoon (optional – can be omitted)
- 1 g fine sea salt , one small pinch, to sharpen the quark (optional – can be omitted)

Warm a small dry skillet over medium heat and add the ground flaxseed. Toast, stirring almost constantly, until it darkens a shade and smells warm and nutty, about 2 to 3 minutes. Tip it onto a plate at once so it doesn't scorch, and let it cool while you handle the quark.

Scrape the quark into a bowl and add the milk, lemon juice, honey, vanilla, and the pinch of salt. Whisk hard for 30 to 60 seconds until the quark turns glossy and spoonable rather than stiff and chalky; add another splash of milk if it's still tight. You want a texture that mounds softly and just holds a swirl.

Fold about two-thirds of the toasted flax through the quark, then spoon it into a serving bowl and swirl the top. Pile the berries over one side, scatter the remaining flax and the lemon zest across the top, and finish with a thin drizzle of honey. Eat cold, right away, while the flax is still crisp.
