Creamy Nordic Barley Risotto with Mushrooms & Kale

A rustic, Nordic-inspired take on risotto that uses pearled barley for a chewy, satisfying bite and mushrooms + kale for winter depth. It delivers beta-glucan fiber from barley and leafy green nutrition while feeling indulgent thanks to a finishing knob of butter and grated Parmesan. Practical, make-ahead friendly and easy to scale for meal prep.
Ingredients
- 300 g pearled barley , rinsed
- 1200 ml vegetable stock , kept hot
- 400 g mixed mushrooms , trimmed and sliced
- 150 g kale , stems removed, leaves chopped
- 1 onion , medium, finely diced
- 3 garlic cloves , minced
- 30 ml olive oil
- 25 g Unsalted butter
- 100 ml dry white wine , optional, can use extra broth (optional – can be omitted)
- 60 g grated Parmesan , plus extra for serving
- 2 fresh thyme , tsp chopped
- 0.5 lemon , zest and 1 tbsp juice
- 1 coarse salt , tsp, plus more to taste
- 0.5 black pepper , tsp freshly ground
- 30 g Pumpkin seeds , for garnish (optional – can be omitted)

Prep: rinse the pearled barley in a fine-mesh sieve under cold water; warm the vegetable broth in a saucepan and keep it at a low simmer.

Sauté mushrooms: heat 1 tbsp olive oil in a wide, heavy sauté pan over medium-high heat; add mushrooms in a single layer, season lightly with salt, and cook without moving for 3 minutes to develop color, then stir and cook 3–4 minutes more until browned; transfer mushrooms to a bowl.

Sweat aromatics: reduce heat to medium, add remaining 1 tbsp olive oil and 10 g butter, then add diced onion and cook 4 minutes until translucent; add garlic and thyme and cook 30 seconds until fragrant.

Toast barley and deglaze: add the rinsed barley to the pan and stir 1–2 minutes to toast the kernels and coat with fat; if using, pour in the white wine and simmer until mostly absorbed.

Cook risotto-style: add 150 ml hot broth and stir until absorbed, then add more broth in 150 ml increments, stirring often and letting the barley absorb liquid between additions; continue for about 22–26 minutes until barley is creamy but still has a slight bite.

Finish with greens and mushrooms: stir in the chopped kale and cooked mushrooms, cover for 2–3 minutes to wilt the kale, then remove the lid and fold in the remaining butter, grated Parmesan, lemon zest and juice; season with salt and pepper to taste.

Serve: spoon into bowls, scatter toasted pumpkin seeds and extra Parmesan on top, and serve immediately with a lemon wedge.
