This is the classic French mousse au chocolat rebuilt without a single egg — the whipping power comes from aquafaba, the humble brine off a can of chickpeas, which foams into glossy peaks that fold into melted dark chocolate like a dream. I keep the added sugar to a whisper because good 70% chocolate already carries deep bittersweet flavor, and a pinch of salt plus real vanilla makes it taste richer than it has any right to. Chill it properly and you get that dense-yet-cloud-like texture that made this dessert famous, entirely plant-based.

  • 150 g 70% dark chocolate , finely chopped, check the bar is dairy-free
  • 120 ml aquafaba , chilled
  • 0.25 g cream of tartar , one small pinch, to stabilize the foam (optional – can be omitted)
  • 15 ml maple syrup
  • 5 ml pure vanilla extract
  • 0.5 g fine sea salt
  • 60 g fresh raspberries , to garnish (optional – can be omitted)
  • 2 g unsweetened cocoa powder , for dusting (optional – can be omitted)

    Melt the chopped dark chocolate gently in a heatproof bowl set over a pan of barely simmering water, stirring until smooth and glossy. Remove from the heat, stir in the maple syrup, vanilla, and sea salt, then set aside to cool until just warm to the touch — you want it fluid but no longer hot, or it will collapse the foam.

    Pour the chilled aquafaba into a spotlessly clean, grease-free bowl and add the cream of tartar. Whip with an electric mixer on high for 8 to 10 minutes until it forms stiff, glossy peaks that hold their shape when the beaters are lifted — it should look like whipped egg white. Patience here is everything; underwhipped aquafaba will not set.

    Add a third of the whipped aquafaba to the cooled chocolate and stir briskly to loosen it. Tip in the rest and fold gently with a spatula, cutting down through the center and lifting up, turning the bowl as you go, until no streaks remain — work lightly to keep the air in. Divide between 4 small glasses or ramekins.

    Chill in the fridge for at least 3 hours, or until set to a firm, mousse-like texture. Just before serving, top with fresh raspberries and a light dusting of cocoa powder.
