This is what I reach for when the kitchen is too hot to cook and I still want something that actually holds me over. Full-fat Greek yogurt gives you real protein and that spoon-coating thickness that freezes into clean, snappable shards instead of an icy brick, while a quick smash of ripe summer berries streaks it with color and just enough natural sweetness. A whisper of honey and lemon lifts everything without turning it into dessert. Break it into pieces straight from the freezer and eat it like a probiotic popsicle you didn't have to wait around for.

  • 500 g Full-fat Greek yogurt , thick, strained style
  • 30 g honey , or maple syrup
  • 5 ml Vanilla extract
  • 1 lemon , zest and 1 tsp juice
  • 120 g fresh raspberries , divided
  • 100 g fresh blueberries , divided
  • 30 g Sliced almonds , toasted
  • 3 g fresh mint leaves , torn (optional – can be omitted)

    Line a rimmed baking sheet (about 25 x 35 cm) with parchment paper, leaving a little overhang so you can lift the bark out later. Clear a flat spot in your freezer first so the tray can go in level.

    In a bowl, stir together the Greek yogurt, honey, vanilla, lemon zest and lemon juice until smooth and glossy. Scrape onto the lined tray and spread into an even layer about 8–10 mm thick using an offset spatula or the back of a spoon.

    In a separate small bowl, lightly crush half the raspberries and half the blueberries with a fork to release their juice, then dollop the crushed berries over the yogurt and drag a skewer or knife tip through to make streaky swirls. Scatter the remaining whole berries, toasted almonds and torn mint over the top, pressing them in gently so they anchor.

    Freeze until solid, at least 4 hours or overnight. Lift the bark out by the parchment and break or cut into roughly 8 shards. Serve straight away; store leftovers in an airtight container in the freezer for up to 2 weeks and let sit 2–3 minutes before eating.
