This is how Icelanders eat skyr: thick, cold, faintly tart, and treated as the whole point rather than a topping. I fold crushed summer berries into fat-free skyr for a purple ripple, spoon it over lightly toasted oats for texture, and finish with fresh berries and a whisper of birch-forest honey. It eats like dessert but lands over 30 grams of protein per bowl with almost no fat — the summer breakfast that actually keeps you going to lunch.

  • 500 g plain fat-free skyr , cold, thick Icelandic-style
  • 50 g rolled oats , for toasting
  • 150 g fresh blueberries , divided
  • 80 g fresh raspberries , or bilberries if you have them
  • 15 ml honey , runny
  • 3 ml Vanilla extract
  • 0.5 lemon , juice only
  • 10 g chia seeds , for topping (optional – can be omitted)

    Toast the oats in a dry skillet over medium heat, shaking the pan often, until they smell nutty and turn a shade darker, about 4 minutes. Tip onto a plate to stop the cooking and let them cool and crisp — warm oats in cold skyr go soft.

    Make the berry swirl: crush the raspberries and half the blueberries (about 75 g) with the lemon juice using a fork until you have a loose, seedy purple pulp. Leave it rough — you want streaks, not a smooth puree.

    Stir the vanilla into the cold skyr to loosen it slightly, then spoon the skyr into two bowls. Drizzle the crushed berry pulp over the top and drag a spoon through two or three times to marble it in without fully mixing.

    Scatter the toasted oats, remaining fresh blueberries, and chia seeds over each bowl, then finish with a thin drizzle of honey. Serve immediately while the oats are still crisp.
