This is the savory seed crispbread I bake in one thin sheet and snap into rough shards, the way a good Nordic knäckebröd should break. The oats bring gluey beta-glucan fibre that both binds the dough and does your cholesterol a favor, while flax and chia set into a natural gel so there's no need for oil-heavy binders or a single gram of sugar. It's the kind of snack you top with hummus or mashed avocado and feel genuinely good about at four in the afternoon.

  • 120 g rolled oats , old-fashioned, not instant
  • 60 g Pumpkin seeds , raw
  • 60 g Sunflower seeds , raw, unsalted
  • 40 g Ground flaxseed
  • 20 g chia seeds
  • 20 g sesame seeds
  • 5 g caraway seeds , or fennel seeds (optional – can be omitted)
  • 5 g fine sea salt
  • 300 ml water , just off the boil
  • 3 g fine sea salt , for topping (optional – can be omitted)

    In a large bowl, stir together the rolled oats, pumpkin seeds, sunflower seeds, ground flaxseed, chia seeds, sesame seeds, caraway seeds and fine sea salt until evenly mixed. Pour over the hot water and stir well, then let the mixture stand until the flax and chia have set it into a thick, spreadable, cohesive paste.

    Heat the oven and line a large baking sheet with parchment. Scrape the seed paste onto the parchment and, using a wet offset spatula or the back of a spoon, spread it as thinly and evenly as you can, ideally 3 to 4 millimeters, right to the edges. Scatter over the flaky sea salt. Score the sheet into pieces with a knife so it will snap cleanly later.

    Bake until the sheet is dry, firm and lightly golden at the edges, rotating the tray halfway through. If the center is still soft, lower the heat and bake a little longer until fully crisp. Cool completely on the tray, where it will finish hardening, then snap along the scored lines. Store in an airtight container.
