Nordic Rhubarb & Berry Oat Bake
A spring rhubarb-berry oat bake with a nubbly whole-grain top, tart fruit below and no refined sugar.

This is the Scandinavian smulpaj — crumble's cozier cousin — rebuilt the FoodHealthLab way: sharp spring rhubarb and juicy berries baked under a rubbly lid of oats, rye and toasted almonds. There's no butter-and-sugar excess here; the fruit sweetens itself with a little maple and vanilla, while oats and rye pile on fibre so a warm bowlful genuinely satisfies. Serve it barely warm with a spoon of cold skyr and let the tart-sweet contrast do the talking. It's the kind of unfussy bake you make on a Sunday and finish, gladly, by Tuesday.
Ingredients
- 400 g Rhubarb , fresh, trimmed and cut into 2 cm pieces
- 250 g mixed berries , fresh or frozen; large strawberries halved
- 45 ml maple syrup , divided
- 15 g cornstarch
- 5 ml Vanilla extract
- 2 g Ground cardamom
- 100 g rolled oats
- 60 g Whole-grain rye flour
- 40 g Sliced almonds
- 50 ml cold-pressed rapeseed oil
- 1 g fine sea salt
- 300 g Plain skyr or thick Greek yogurt , chilled, to serve (optional – can be omitted)

Heat the oven to 190°C and lightly oil a 1.5-litre baking dish. In a bowl, toss the rhubarb and berries with the cornstarch, 30 ml of the maple syrup, the vanilla and the cardamom until evenly coated, then tip into the dish and spread level. The cornstarch thickens the juices as they bubble so the fruit sets to a soft jam rather than a puddle.

In the same bowl, stir together the oats, rye flour, sliced almonds and salt. Pour in the rapeseed oil and the remaining 15 ml maple syrup and rub together with your fingertips until the mixture clumps into loose, gravelly crumbs. Scatter evenly over the fruit, leaving a few gaps for the juices to bubble through.

Bake until the topping is deep golden and the fruit juices bubble thickly at the edges, about 40 minutes. If the top browns too fast before the fruit softens, lay a sheet of foil loosely over it for the last 10 minutes. Let it rest so the filling sets.

Cool for at least 15 minutes — the bake is best barely warm, when the fruit has thickened but still tastes bright. Spoon into bowls and top each with a generous spoonful of cold skyr or Greek yogurt for a cool, tangy contrast.
