A winter-ready Nordic lunch bowl built for satiety: nutty whole rye grains and omega‑3 rich Smoked Salmon anchored by roasted beets and a crunchy radish-cucumber salad. A tangy mustard‑dill yogurt ties the bowl together with very little added oil, keeping calories moderate while delivering fiber and heart‑healthy fats. Practical, repeatable, and easy to pack for lunch or enjoy warm at the table.

  • 200 g whole rye grains , rinsed; optional 1‑hour soak to shorten cooking
  • 750 ml water for cooking rye
  • 300 g small raw beets , trimmed, scrubbed, halved or quartered depending on size
  • 200 g smoked salmon , flaked into bite‑sized pieces
  • 150 g plain low‑fat yogurt
  • 15 g Dijon mustard
  • 10 g Fresh dill , reserve a few fronds for garnish
  • 15 ml lemon juice , about 1/2 lemon
  • 80 g cucumber , thinly sliced into ribbons
  • 50 g radishes , thinly sliced
  • 40 g Arugula , washed and spun dry
  • 15 ml olive oil
  • 20 g toasted sunflower seeds , toast briefly in a dry pan until fragrant
  • 40 g red onion , very thinly sliced (optional – can be omitted)
  • 30 ml Apple cider vinegar , mix with equal water for pickling option (optional – can be omitted)
  • 3 g fine sea salt , plus extra to taste
  • 1 g black pepper , freshly ground

    Preheat the oven to 200°C. Toss trimmed beets in 1 tbsp (15 ml) olive oil and a pinch of salt; wrap in foil or spread on a baking tray and roast until tender when pierced, about 35 minutes depending on size. When cool enough to handle, peel if desired and cut into wedges.

    While beets roast, cook the whole rye grains: place rinsed whole rye grains and 750 ml water in a saucepan, bring to a boil, then reduce to a simmer, partially covered, until tender but still chewy, 45–50 minutes (or 25–30 minutes in a pressure cooker). Drain any excess water and season with 1 g salt.

    If using pickled onion, combine sliced red onion with 30 ml apple cider vinegar and 30 ml water and a pinch of salt; let sit at room temperature for at least 15 minutes while other components cook.

    Make the mustard‑dill yogurt: whisk together yogurt, Dijon mustard, chopped dill, lemon juice and a pinch of black pepper (reserve a few dill fronds for garnish). Adjust seasoning and thin with 1–2 tsp water if you want a pourable dressing.

    Prepare the crisp salad: toss cucumber ribbons, radish slices and arugula with a drizzle (about 5 ml) of olive oil and a small pinch of salt to wake the vegetables but keep dressing light.

    Assemble bowls: divide warm whole rye grains between two bowls, arrange roasted beet wedges, flaked Smoked Salmon and the crisp salad in sections. Spoon a generous dollop of mustard‑dill yogurt on top, scatter toasted sunflower seeds and pickled onion (if using), finish with a grind of black pepper and reserved dill.
