Steel-cut oats have more bite and a lower glycaemic hit than rolled oats, which is exactly why they're worth the extra simmering. Grating the apple in melts it into the porridge so you barely need any added sweetness, and the walnuts bring omega-3s and crunch.

Scaling note. Scales linearly; steel-cut oats like a wide, heavy pan so they cook evenly. Batch-cook and reheat with a splash of milk — the texture holds up better than rolled oats.
  • 80 g steel-cut oats , dry weight
  • 250 ml semi-skimmed milk (1.5% fat)
  • 250 ml water
  • 1 apple , coarsely grated
  • 20 g walnuts , chopped
  • 2 g ground cinnamon not scaled
  • a pinch fine sea salt not scaled

Instructions

    Bring the milk, water and a pinch of salt to a gentle simmer in a heavy pan.

    Stir in the oats and cinnamon, drop to low and simmer, stirring often, for 20–25 minutes until thick and creamy but still with a little chew.

    Stir the grated apple through in the last 3 minutes so it softens and sweetens the porridge.

    Spoon into bowls and top with the walnuts and a little extra cinnamon.
