This is my weekday answer to uova al pomodoro: a slice of hearty wholegrain bread pressed into a muffin tin, cradling a whole egg that bakes to a just-set white and a molten yolk. Cherry tomatoes go in raw and turn jammy and blistered around the egg, while a little Parmesan and oregano pull it firmly toward Tuscany. It looks like you fussed, but it is really just assemble, crack, and bake.

  • 4 wholegrain sandwich bread , large square slices, crusts on
  • 4 large eggs , large, at room temperature
  • 160 g cherry tomatoes , halved
  • 30 g Parmesan , finely grated
  • 15 ml olive oil
  • 1 g dried oregano
  • 1 garlic cloves , clove, halved
  • 4 g fresh basil leaves , torn, to finish
  • 2 g fine sea salt
  • 1 g black pepper , freshly ground
  • 1 g red pepper flakes , to finish (optional – can be omitted)

    Heat the oven to 190C. Lightly brush 4 wells of a muffin tin with some of the olive oil. Rub each bread slice on both sides with the cut garlic clove, then flatten the slices with a rolling pin so they become pliable and thin.

    Press one slice of bread into each oiled well, pushing it down and up the sides to form a cup; the corners will pleat and stick up like petals. Brush the insides lightly with the remaining olive oil. Divide the halved cherry tomatoes among the cups and season with the salt, pepper, and oregano.

    Crack one egg into each cup, letting it settle over the tomatoes, and scatter the Parmesan around the whites, avoiding the yolks. Bake until the whites are just set and the bread edges are toasted and crisp, 16 to 18 minutes; leave a minute or two less if you want the yolks fully runny.

    Let the cups rest in the tin for 2 minutes, then lift them out with a small spatula. Finish with torn basil and, if you like heat, a pinch of red pepper flakes. Serve warm.
