Winter Wholewheat Tea Loaf with Orange‑Soaked Currants

This British‑inspired tea loaf uses whole wheat flour and a fruit soak to keep crumb tender while reducing added sugar. Currants are gently plumped in hot black tea with orange zest and a splash of orange juice (and rum if you like) so the loaf stays moist and flavorful. It's an everyday winter bake that feels indulgent at tea time yet is stable and repeatable in a home oven.
Ingredients
- 260 g Whole-wheat flour , preferably stone-ground or wholemeal
- 120 g Currants , rinsed briefly if dusty
- 120 ml Strong black tea , freshly brewed, about 1 tea bag, ~95°C
- 2 orange , zest of 2 medium oranges
- 30 ml Orange juice , freshly squeezed
- 125 g Plain Greek yogurt , full-fat or 2%
- 80 g Unsweetened applesauce
- 50 g honey , runny
- 2 large eggs , large, room temperature
- 60 ml neutral oil
- 10 g Baking powder
- 2 g baking soda
- 4 g fine sea salt , fine sea salt
- 15 ml Optional dark rum , adds depth to the soak if desired (optional – can be omitted)
- 30 g Optional orange marmalade for glaze , warmed and strained if desired (optional – can be omitted)

Plump the currants: put the currants and orange zest in a heatproof bowl. Pour over the hot tea and add the orange juice and optional rum if using. Cover and leave to soak at room temperature for at least 4 hours or overnight so the fruit absorbs liquid and flavor.

Preheat and prep the tin: when ready to bake, preheat the oven to 170°C (fan) / 180°C (conventional). Line a 23 x 13 cm loaf tin with parchment and lightly oil the paper.

Combine dry ingredients: whisk together the whole wheat flour, baking powder, baking soda and salt in a large bowl so the raising agents are evenly distributed.

Mix wet ingredients: in a separate bowl whisk the eggs, Greek yogurt, applesauce, honey and oil until smooth and slightly aerated. Pour the wet mix into the dry ingredients and fold gently until just combined — a few streaks are fine.

Add soaked fruit: stir the soaked currants into the batter, including any leftover liquid from the soak (it helps keep the loaf moist). Give the batter a final gentle fold; do not overmix.

Bake: transfer the batter to the prepared tin, smooth the top, and bake in the center of the oven for 45–55 minutes, until the top is golden and a skewer inserted into the center comes out with a few moist crumbs but no raw batter.

Cool and glaze: let the loaf cool in the tin for 10 minutes, then lift out onto a wire rack. If using marmalade, warm it slightly and brush over the warm loaf for a glossy citrus finish. Cool completely before slicing for cleaner cuts.
